Fruits and Vegetables
You don't need to be a genuis to figure out that fruits and vegetables are the healthiest and the best possible food that you can eat. The benefits of eating raw fruits and vegetables are so enormous that a whole web site can be dedicated to it... and there are some websites that do that. - Fruits are very easily digested and put minium load on the digestive system -taking an average of 30 minutes Raw Vegetables are a little more difficult to handle but still take a maximum of two hours compared to a minimum of four hours for cooked food
- They are high in water content - they are over 70% water which is required for survival
-Fruits provide carbohydrates in the form of pre-digested simple sugars like fructose to act as fuel for the body.
- Fruits and Vegetables provide a huge number of vitamins, minerals and nutrients to the body.
- Presence of Live Enzymes. Accoriding to the enzyme theory, Our body is born with a limited stock of enzymes, which are 'live" chemicals required for all actions of the body. Enzymes are of two kinds, metabolic and digestive. Even digestion needs enzymes. If the food being eaten does not contain the enzymes required to digest it, the body will convert its metabolic enzymes into digestive enzymes. Thus the enzyme stock of the body is reduced. This is what is called ageing, and when the enzyme stock is NIL, we die. So to live long and healthy, we have to aintain our enzyme balance. The easiest way to do this is to eat foods that have the enzymes in them for their own digestion, so that the body's enzymes are conserved.
And what kind of food has live enzymes - only on kind of food-- raw food! All raw fruits and vegetables are "alive". They have a life force inside them, Enzymes, which contribute rather than deplete the body's enzyme balance. The only thing with enzymes is that they are alive. Like all living creatures, they are sensitive to heat and cannot tolerate over 118 degrees farenheit or about 47 degrees Celsuius. At temperatures above this, they die. Food is cooked at minimum 100 Degrees Celsius or 212 degrees farenheit - the boiling point of water. Usually (in case of roasting, frying, boiling etc) at much higher temperatures. Many nasty things happen to the food because of this (refer to the section on cooked food for details), but primarily the food dies. The enzymes are lost. Now this food puts a load on the body for digestion.
That is why a great importance is attached to eating raw foods, and the only kind of food that we can enjoy eating raw are fruits and vegetables.
Because of all this, fruits and vegetables help in improving health and preventing all kinds of disease, and even healing in certain cases. Almost every major disease in today's world can be prevented and helped simply by increasing your consumption of raw fruits and vegetables. Proper consumption of Fruits and Vegetables
In order to derive the maximum benefits from your consumption of fruits and veggies, follow these simple rules:
Rule 1: Fruits are usually eaten raw, but vegetales are usually cooked. This is a waste of nutrients. Avoid cooking vegetables and eat them raw as far as possible. If you must cook them , do so conservatively - ie steaming is the least harmful, while deep frying is the worst. Refer to the section on health impact of cooking methods for details
How much to consume? Well don't overeat, have as much until you are full, but there is no limit like eating only 2 mangoes or 3 bananas. The more fresh raw fruits and veggies you have, the better it is for you as long as you don't overeat.
How to consume fruits? Since fruits are easily digestible, they don't combine well if eaten with other foods. It is recommended to eat fruit alone on an empty stomach. In other words, don't eat any cooked food BEFORE consuming the fruit, don't eat any cooked food ALONG with the fruit and don't eat any cooked food for at least half an hour AFTER you have eaten the fruit. If this is not possible or practical, no problem - eat the fruits any way you can - but eat them.
The easiest way to follow this recommendation is to have only fruit for breakfast (no tea/coffee etc before), or eat fruit about four hours after your lunch meal or night dinner (unlikely).
Which fruits / vegetables to consume? Any and every one of them that you like. No fruit or vegetable whose taste you like is harmful to you. But ensure they are eaten raw and as fresh as possible. Don't eat unripe fruit or over-riipe fruit or stale vegetables.
How to consume Raw Vegetables? Try to have a big healthy portion of raw vegetable salad, before you eat your lunch or dinner. Ideally half your meal should consist of salad, but start with as much as you can. If you find the salad bland, add whatever light dressings or chutneys or salt/pepper to your taste. But avoid heavy dressings based on mayonnaise, yoghurt, cheese, vinegar etc.
A few other tips - Avoid cooking fruits or adding sugar/salt/masala tothem - Avoid mixing fruits and vegetables together in the same meal
Summary If you find all this very complicated, just do one simple thing. Increase the quantity of raw fruits and vegetables in your diet. Increase it slowly to as much quantity as you can. Whatever little bit more or raw food you will eat, the more benefit you will get.
